melts in your mouth.

Chestnuts, Dried

Chestnuts show up often in English cookbooks. Eight ounces of
my dried chestnuts equal one pound, three ounces of fresh. You
don't have to peel these. To rehydrate, put them in a pan of boiling
water and let them simmer 10 minutes; soak them one hour in the
pan and they are ready for your receipt.

Muscat Raisins

Muscat raisins are praised as larger, meatier, and have a full
fruity flavor desired by cooks for seasonal baking. These raisins
are made from muscat grapes and have the seeds removed mechanically.
When the seed is pushed out through the raisin's skin it brings
the sugar to the surface of the grape, making the raisins sweet
and sticky. These grapes, with the seeds still in them, were the
traditional and most popular variety for holiday baking until
the Thompson Seedless Raisin was invented in 1876 by William Thompson
in California.
