"Comfits, Sweetmeats, fruits and other Things preserv'd dry" (N Bradley)

Sweetmeats and Candies

Sweetmeats: "Delicacies made of fruits preserved with sugar." (Samuel Johnson)

Fruit, roots, lettuce and mallow stalks preserved in syrup were wet suckets. When candied or crystallized they were dry suckets. (John Nott)

Citron, Candied

8 oz, $6.25

The real thing! Imported, this product is the fruit of a tree native to India, NOT the citron melon that is used in modern cooking. The citron fruit is larger than a lemon and less acidic, and was a popular ingredient in many cakes throughout England and the colonies.

Pepper-mint Candies
(shown on right)
2 oz, $3.00

18th century receipt using sugar, starch, and pepper-mint oil literally melts in your mouth.

Chestnuts, Dried

8 oz, $8.50

Chestnuts show up often in English cookbooks. Eight ounces of my dried chestnuts equal one pound, three ounces of fresh. You don't have to peel these. To rehydrate, put them in a pan of boiling water and let them simmer 10 minutes; soak them one hour in the pan and they are ready for your receipt.

Muscat Raisins
1 lb, $15.75

Muscat raisins are praised as larger, meatier, and have a full fruity flavor desired by cooks for seasonal baking. These raisins are made from muscat grapes and have the seeds removed mecha
nically. When the seed is pushed out through the raisin's skin it brings the sugar to the surface of the grape, making the raisins sweet and sticky. These grapes, with the seeds still in them, were the traditional and most popular variety for holiday baking until the Thompson Seedless Raisin was invented in 1876 by William Thompson in California.

Brown Licorice Coins
2 pz. $3.75

Not an 18th century sweetmeat per se, but a lozenge for sore throats. This attractive coin-shaped sweet and soft lozenge has a lovely gentle licorice flavor. Imported from Holland.

Black licorice color is the result of "licorice black juice" which did not come into use till the 20th century.
